How to make pickled cabbage

Pickling solution


In a big pot. put 8 cups of cold water, 

4 table spoons of sugar

4 table spoons of salt

1 table spoon of turmeric.

4 very spicy hot chilli.

Heat them and stir until sugar and salt is dissolved.

Cool the sugar-salt liquid. To cool quickly, put the pot in a basin of cold water, changing the cold water frequently.

Asian Pickled Mustard Greens 



GAI CHOI vegetables

 pickling solution of sugar-salt and turmeric liquid
 soak and washed Gai Choi 3 times
 spicy red chillis
 blanch quickly in a big pot of boiling water
 squeeze dry the veg.
 dry glass bottle,
 add pickling solution to cover the veg. add 2 table spoon of vinegar in each bottle, keep in fridge.
 after three days.

 From a young age, I watched Grand pa Chan and mother make our own Cantonese Mustard green pickle.酸菜

We loved this sweet and sour and crunchy pickle. My sisters have different modified ways. 

Unfortunately, the water engineer is not keen in the preservatives in the shop bought ones, and if I made them, his words of botulism rings in my ear.  

I decided to make some when daughter G asked for some Giam Chye fish. I happen to have just bought the GAI CHOI vegetables. 

Here's how I made it:

In a big pot. put 8 cups of cold water,

4 table spoons of salt

1 table spoon of turmeric.

Three bundles of GAI CHOI,

cut into 1 and 1/2 inch lengths, quick soaks of veg in lots of water, and drain. Check if there is no more sediments left.

In a big pot of boiling water, quickly blanch the Veg, stir quickly, when veg turns bright green. Remove from heat.

Drain the veg from the hot water, pouring vegs and water into a sieve.

Put veg into a basin of cold water, move it around, do this three times, until the veg are cool to touch.

In the sieve, squeeze the veg until they are quite dry. Put the veg into clean bottles.

When the the sugar-salt liquid is cooled, add 4 spoons of vinegar. Add to the veg in the bottle. Cover and keep in fridge.

Pickle should be ready in 3 days. The end product is yellow due to the turmeric. My mum did not use turmeric, her pickles are a dull yellow.

The finished product should be crunchy, sour, and super delicious.

Just four years after he killed his wife in a jealous rage, a millionaire banker is out of jail and back living with their two children at the family home where he strangled her.
Neil Ellerbeck, 49, has moved into the smart suburban house where he took his wife Kate's life after she asked for a divorce.
Mr Ellerbeck, who earned £170,000 as HSBC's global chief of investment, feared losing his two children, £650,000 home and £1.3million fortune in the break-up.
He lashed out after bugging her phone calls and reading her texts, discovering she had been having an affair with her son's tennis coach as well as having 'close friendships' with a childhood sweetheart and a chef at the Ritz.
She received 43 separate injuries in the attack in November 2008, around 18 of which were on her face.
After his furious assault, Ellerbeck collected their ten-year-old daughter from a school entrance exam.
He later insisted his 46-year-old wife had been alive when he left her.
During his Old Bailey trial three years ago, it emerged he had been having an affair himself during the troubled 14-year marriage.
He was acquitted of murder but jailed for eight years for manslaughter after a jury accepted he did not intend to kill his wife.
Time spent in custody awaiting trial and his good behaviour means he served a total of four years behind bars.

He moved back into the family home in Enfield, North London, after his release last month.
He has been seen moving flat-pack furniture into the property, now believed to be worth around £800,000, which he shares with his son, 17, and daughter, 14.
Yesterday, he said: 'It's early days. I'm just trying to get settled back with the children.

new wife killed during their honeymoon

(CNN) -- A millionaire British businessman accused of hiring hit men to kill his new wife during their honeymoon in South Africa pleaded not guilty as his trial began Monday.
Shrien Dewani, 34, has denied orchestrating the killing of his wife, Anni, in Cape Town in November 2010.
The slaying took place during a taxi ride through a township on the edge of the South African city, just over two weeks after the couple's wedding.
The taxi driver, Zola Tongo, confessed within weeks of the bride's death that he had hired two men to kill her. In a plea deal with South African authorities, he said he was paid by Dewani to carry out the murder and to make it look as though the couple were the victims of a carjacking.
Tongo was subsequently sentenced to 18 years in prison for his part in the killing. His two accomplices are also serving lengthy sentences for their role in the crime.
Family hoping for answers
The victim's family say they are relieved that Dewani is now going on trial in Cape Town.
"Hopefully, we will get all the answers we want," her uncle Ashok Hindocha said Sunday, according to local media reports.
Dewani, a care home owner, had returned to the United Kingdom after his wife's death. He avoided extradition to South Africa on mental health grounds during a three-year court battle, but was eventually sent back in April to face trial.

                 My friend Artist Oliver Wong painted this. I asked him if it was a sad face and he said yes. It suits my book to a T. Cry Of Oppressed Women. All the heroines of the books had at some stage got sad faces.

My printer Jef asked what my books are about. He displayed my books in his reception area.
